Movies make this shit look so damn cool, but throwing a knife and actually having the pointy end stick into your target does require some practice. Just like with archery, the skill requires you to consistently repeat the movements while making tiny adjustments to the throw. There are the showy, spinny circus trick throws and then there are the boring, practical and tactical "no-spin" throws. Within a dozen throws, most people can get a knife to stick using the tactical method. This guy explains it pretty well:

Now for the practical use against zombies. Well, unless you're able to constantly hit a loonie-sized, moving target at various distances, don't bother throwing your knives. They are good for dishing out some damage against a human attacker without getting too close. Keeping your distance is always the best insurance policy. But I would use throwing knifes in a different way.

This past year I've practiced carving and whittling spears specifically for stabbing zombies through the eyes. Way harder than you think. It's challenging enough to find a decent stick that's straight and not too flexible or rotted through. Making marshmallow spears is easy, but an actual spear tip made to rip through eye sockets and brains can take at least an hour of meticulous work, not including fire-hardening the tip.

Throwing knives aren't the best for whittling, but they are light-weight, durable, and the double-edge makes them ideal for stabbing. In a pinch, you can simply duct-tape one of the knives to a sturdy stick and be ready for a fight in seconds. You can also partially split the end of your stick and wedge the thin knife handle in, then wrap it with paracord or more tape. Most throwing knife sets come with 3. You can have spares for yourself or simply weaponize the less-prepared survivors in your crew.

So whether you're impressing everyone at the party with your sick knife-throws or arming your Spartan team with zombie-slaying spears, throwing knives can be both practical and fun.
